Entropy PHP 5 package
Marc Liyanage has released a package installer for PHP 5 on OS X. Marc’s package (ahem) is a more ‘Mac-like’ installer than the methods outlined in other tutorials — i.e. a double-clickable package.
The package installs PHP into /usr/local/php5 and updates the Apache config to reference the new version, whilst allowing you to switch back to PHP 4 if you wish (by editing the Apache config).

Not sure about the dependency of MySQL, Alex - think that might have been a coincidence for a few users. I’ve yet to install it successfully on my particular setup (with MySQL installed).
Marc has released an updated version. It looks like the difficulties experienced by some people were a result of not having the Developer Tools installed.
Egads - Marc has released another version... PHP 5.0.0-15 now includes MySQLi support and SOAP. Does this man not sleep?
Just a note. From looking at the forum, you need to have mySQL installed for this to work.
